How did your meal planning go this week? Are you excited and stoked for next week, or frustrated and unconvinced that this is the best way of life?

I have found that most people get frustrated due to a lack of menu options. Are you bored with your usual breakfast menu? If so, I am here to help! I have a fun way to prepare hash browns in a waffle iron that will change things up a bit. Hubby and I don’t eat potatoes very often, but we love them this way!

When done correctly, these babies come out crispy on the outside and moist on the inside. The trick is to allow them to cook in the waffle iron long enough, without losing patience. The magic number is 15-18 minutes.

For my basic recipe I combined freshly grated potatoes and zucchini with Parmesan cheese, sea salt, dried parsley and grape seed oil. I heated my iron to high and added enough of the mix to fill the mold and allow the potatoes to cook. I used a heart-shaped waffle iron that I got as a wedding gift years ago.

After 15 -18 minutes, the potatoes come out golden brown and delicious. They are perfect for weekly meal prep because just like Pop Tarts, you can pop them in the toaster to reheat. They are also great for supper in place of bread – think fried catfish and waffle iron potato wrap or use it as a bed to serve grilled fish and veggies.
