The last few weeks have been exciting for me! My show The Posh Pescatarian: Appetite for Adventure recently launched in Paris, Moscow and Toronto on myZen TV Network and I just completed my first live cooking demo on Fox Studio40 LIVE!

The demo was a lot of fun and more challenging then I imagined. I only had 4 minutes to tell a good story and make a recipe. I know how to do both pretty well, but the idea of a ticking clock was throwing me off my game a bit.

Of the last few days I tried a number of recipes before landing on one of my favorite go-to meals, fish en papillote. This style of cooking had been a favorite for a few years and I have posted about it on Facebook quite a bit. What I like about it is the fact that it works well indoors and outdoors. Perfect for the oven or the stove and travels well.

The recipe

I got lucky and found a local fishmonger that was interested in partnering with me. The company is called The Little Fish Company and they are exclusively a wild, local seafood provider. The company owner, Brand, gave me two pounds of wild king salmon. It was gorgeous fish that I coupled with local blood oranges, fresh thyme, sea salt, ground ginger and olive oil. I served it with my classic mango salsa. Check out my recipe for mango avocado salsa for something different.
