I’m thrilled to be participating because serving up my food to friends and family is one of my favorite things to do. The festival gives me the chance to do so on a larger sale. This event has been on my list for a while and I’m grateful to have the opportunity to attend this year. I LOVE Dungeness crab. It’s my preferred variety next to King, but I decided to offer wild King salmon quesadillas to guests at this crustacean celebration because I want to offer a shellfish free option. We will be serving up wild King salmon quesadillas. Yes, King salmon, or Chinook, AKA: the crown jewel of the West Coast.
Shellfish allergy is a big deal, and a few members of my family suffer from this condition. It affects adults and children alike to different degrees. Shrimp, crab, clams, lobster and oysters are the primary culprits and can induce a severe reaction including mouth and throat itching, swelling and skin reactions. It can be life threatening and cause anaphylaxis.
