Aside from quesadillas, this may be the easiest recipe I know. Well, maybe not the easiest, but you get my point! This savory salmon burger is a crowd-pleasing recipe that is a weekday meal treat. You can put it together in about 15 minutes, but only if you are prepared.
In previous posts, I have mentioned my very busy schedule, and how important meal prepping is to my family, and my sanity. I prep fresh veggies and cook some food in advance, such as the salmon that you’ll find in this recipe. I used leftover broiled salmon for this recipe and it yields my favorite result. You can use tinned salmon, but it’s not my preferred method – depending on the brand, the texture my be too soft. If you choose tinned salmon, drain it well and sauté it before adding to the onions.
Ingredients:
2 cups of prepared/seasoned salmon
½ cups chopped Spanish onion
¼ cup of your favorite barbeque sauce
2 tbsps of apricot jam
2 tbsps sunflower oil
2 tbsps water
Fresh lettuce, tomato and all you favorite burger fixings
Directions: Add the sunflower oil to the bottom of a large skillet over medium heat. Add the onion and sauté until soft. Pour in the salmon, if whole; break them up into nice bite sized pieces. Sauté over medium heat for 3 to 4 minutes. Next, add the barbeque sauce, apricot jam and water. Cook over low heat until cooked through – should take about 5 minutes.
Hubby likes a toasted burger bun (I enjoy this this without a bun on most occasions), so I add a little ghee to the bread and set it under the broiler until golden brown. Once toasted, I pile the salmon mixture on to one side, and veggies to the other. Enjoy!
