Why bother buying bottled spice blends from the market when you can easily make a better tasting versions at home in minutes! Lemon pepper is one of the most popular seasonings around. My version of this tasty spice blend is delicious and works well on fish and vegetables (for you flexatarians, it also works well on chicken).
Posh and Practical Lemon Pepper Spice Blend
Ingredients:
Zest and juice of 3 large lemons
1 tablespoon of whole black peppercorns
5 green cardamom pods
2 pinches of fresh thyme
2 teaspoons of sea salt (more if you’d like but start with a small amount)
¼ cup avocado or olive oil
Directions:
Using a mortar and pestle, pound the cardamom pods to remove the green hull. Pick through the mortar and do away with the hulls. You will be left with fragrant black seeds. Add the black pepper corns to the mortar and grind the cardamom and peppercorns to medium fine. Add the sea salt, fresh thyme and lemon zest and grind the mix to a paste-like consistency. Add the avocado oil and lemon juice to the mix and blend well. You can also do this in a bowl if your mortar isn’t large enough.
Use this fabulous spice blend immediately. Try slathering it on shrimp, salmon, white fish or vegetables (I like to use zucchini) and throwing it on the barbeque or sautéing over high heat.
